cookies peanut butter

Peanut Butter Dreams

Another favorite recipe, from my Grandmother.

1 cup butter or margarine
1 cup peanut butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups Ground Oat Flour
2 teaspoons baking soda
1/4 teaspoon salt
1 cup chopped peanuts

Beat together butter, peanut butter and sugars. Blend in eggs and vanilla. Add combined dry ingredients
to butter mixture. Mix well and stir in peanuts. Shape into 1″ balls. Please on ungreased cookie sheet.

Bake 350 degrees 10 minutes. Makes approx. 4 1/2 dozen.

Ground Oat Flour
Put Quaker oats in a blender and blend 60 seconds – 1 1/4 cups quaker oats makes 1 cup oat grain flour.

Butternut Squash Soup

4 tbsp. olive oil
1/4 tsp chopped garlic
1/2 Spanish onion diced
1/2 cup diced carrot
1/4 cup diced celery
3 cups diced pulled butternut squash
4 1/4 cups of chicken stock
pinch grated nutmeg
2 tbsp. maple syrup
dash salt – pepper

After all the above has simmered for an hour, I puree in the blender for a smooth texture.

Top with sour cream or yoghurt

Chocolate Lovers

I like many, enjoy chocolate. This has to be one of my all time favorites that I enjoy.
Below is the recipe for many to enjoy.

HOT FUDGE SAUCE

2 cups of milk
2 cups of coffee
2 cups of chocolate syrup (unsweetened)

Heat as the mixture becomes hot,

Add in the following mixture:
1 cup milk
2 or 3 tblsp of cornstarch.
This will thicken the sauce.

Make your chocolate cake, I always make it in a glass oblong pan that can easily be cut into squares.

Cut your square, slice in half and place your vanilla ice cream in the middle. Pour over the

Hot Fudge Sauce on top. Delicious!!! Enjoy this on Valentines Day.
